Why did the Eastern Roman empire not immediately start trying to retake western Roman empire territories (mainly Italy, Rome) after the west fell? Would that not have been their best timing to do that instead of decades later?

In the vikings TV series, the Sami people are portrayed as cowards who ambush their enemies while they're travelling, using primitive weapons, in the likes of rocks tied to ropes. Almost ewok-like. How accurate is this?

Antiquity shows us Jewish soldiers and sometimes even generals in the Roman legions. Medieval warfare has notable jewish soldiers mostly in Iberia and Southern Europe. But in Western and Central Europe, there are few examples of Jewish arms and armor. Are any known, say in the Holy Roman Empire?
